
Mexican guacamole is one of my favorite ways to enjoy the fresh flavor of avocado, a savory fruit which is also known as an alligator or a butter pear.
Guacamole makes a great vegetarian friendly dip for tortilla chips, crackers, breadsticks, and celery, but it’s also great on your favorite sandwich or burger or as a healthy topping to add more excitement to your salads.
Below is a delicious party friendly appetizer recipe for a wonderful Roasted Garlic, Poblano, and Red Pepper Mexican Guacamole Dip from the folks at the wittily named food blog, Ezra Pound Cake.
What makes this guacamole so good is that you roast the garlic and the red pepper for it, which adds to the rich flavor of this easy and beautiful looking guacamole.

Ingredients:
6 garlic cloves, unpeeled
1 medium red bell pepper
1 medium poblano pepper
1/4 cup finely chopped green onions
2 tablespoons chopped fresh cilantro
2 teaspoons fresh lime juice
1/4 teaspoon kosher salt
1 ripe peeled avocado, seeded and coarsely mashed
