3 poblano peppers
1 can of black beans, drained and rinsed
1/2 cup of cojita cheese
1/2 cup of orange and yellow bell pepper, diced
1/2 small sweet yellow onion, diced
1 cup of frozen sweet yellow corn, thawed
3 tbsp cilantro, chopped
1 zucchini, diced
1 large handful of grape tomatoes, sliced
Sea salt and fresh cracked pepper to taste
1/2 tsp of cumin
Dash of oregano
